Here's a good way to start.
Most of the following links take you straight to internship pages.

Foreign Language and Service Learning Fellowships:

The goal of this fellowship is to support students wishing to enhance their skills in a language other than English while contributing to the social good in a low-income country by interning or volunteering with an appropriate service provider (e.g. a health clinic, NGO, school, etc). Students with sufficient language training would likely participate in a full-time internship or volunteer work. Students with only basic skills in a language that is not regularly available at Grinnell might choose to enroll in a language program and serve as a volunteer with some organization. Students who arrange an internship sponsored by another college program in a location where they will not be using their native language might apply to supplement that award with funding to cover living expenses and program costs for intensive language training before the beginning of the internship. Interested persons must speak with the Chair of Global Development Studies before submitting an application. Deadline: Friday, April 24th, 2009 Noon GDS Chair: Jack Mutti Foreign Language and Service Learning Fellowship Application.doc
