Facilities Management collects approximately 51 tons of food waste from Dining Services each year. It was anticipated that the new dining hall, with the cook-to-order system, would reduce food waste, but this has not been the case. A significant portion of this waste is food taken by students but not consumed. The above "Food Waste Tracker" is only part of an educational campaign to encourage students to try and take only what will be eaten.
If all of the food waste is being composted, why does it matter?
Composting the food waste eliminates the contribution to the landfill and the associated issues, but wasted food still represents wasted dollars and wasted energy.
